- Mix the flour and salt together in a medium-sized mixing bowl.
- Combine the beaten egg, cooked and pressed dry spinach, and melted margarine, then stir into the flour mixture.
- Mix well until the dough comes together.
- If the dough is sticky, add a little more flour and knead lightly on a floured surface.
- Roll the dough as thin as possible with a floured, covered rolling pin.
- Let the rolled dough stand for 45 minutes.
- Cut the dough into desired-sized noodles.
- Cook the noodles in 2 quarts of boiling water for 8 to 10 minutes or until just tender.
- Drain the noodles and serve.
