Ingredients

  • 1 cup whole wheat flour
  • 1/2 teaspoon salt
  • 1 egg
  • 1/4 cup spinach, cooked and pressed dry
  • 1 tablespoon melted margarine

Instructions

  1. Mix the flour and salt together in a medium-sized mixing bowl.
  2. Combine the beaten egg, cooked and pressed dry spinach, and melted margarine, then stir into the flour mixture.
  3. Mix well until the dough comes together.
  4. If the dough is sticky, add a little more flour and knead lightly on a floured surface.
  5. Roll the dough as thin as possible with a floured, covered rolling pin.
  6. Let the rolled dough stand for 45 minutes.
  7. Cut the dough into desired-sized noodles.
  8. Cook the noodles in 2 quarts of boiling water for 8 to 10 minutes or until just tender.
  9. Drain the noodles and serve.
