Ingredients

  • 1 lb. fettucine
  • 3/4 qt. half and half cream
  • broccoli
  • onions
  • squash
  • zucchini
  • small sweet carrots
  • 3/4 pkg. tofu, cubed
  • 5 to 6 garlic cloves, chopped
  • tarragon
  • 1/2 c. cooking wine
  • 1/3 c. walnut oil
  • mushrooms

Instructions

  1. Slice vegetables including broccoli, onions, squash, zucchini, sweet carrots, and mushrooms; prepare for steaming and steam until tender.
  2. Saute some of the onions, mushrooms, tarragon, and cubed tofu in walnut oil until fragrant and lightly browned.
  3. Add cooking wine and chopped garlic cloves to the sautéed mixture and cook for a few minutes.
  4. Pour in half and half cream and simmer until the mixture reaches a small boil.
  5. Cook fettucine pasta according to package instructions until al dente.
  6. Add egg yolks to the sauce and stir well, then combine with the cooked pasta.
  7. Mix the steamed vegetables into the pasta and sauce, then stir in Parmesan cheese.
  8. Serve hot and enjoy.
