Ingredients

  • 5 egg yolks
  • 1 cup granulated sugar
  • 1 cup sifted cake flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla
  • 5 egg whites
  • 1 cup ground nuts
  • 5 tablespoons cold strong coffee

Instructions

  1. Beat egg yolks until thick.
  2. Add sugar and beat until well blended.
  3. Sift cake flour and baking powder together.
  4. Add the sifted dry ingredients alternately with cold coffee and vanilla to the egg yolk mixture, mixing gently.
  5. Beat egg whites until stiff peaks form.
  6. Fold the beaten egg whites into the batter gently.
  7. Fold in ground nuts, reserving a few for the top.
  8. Pour the batter into two ungreased 9-inch cake pans.
  9. Bake in a preheated 350°F (175°C) oven for 25 to 30 minutes.
