Oatmeal Apple Squares

Ingredients

  • 1 c. Butter Buds or fat-free margarine
  • 1 c. firmly packed brown sugar
  • 2 Egg Beaters (1/2 c.)
  • 1/3 c. apple juice
  • 2 tsp. vanilla
  • 1 1/2 c. whole wheat flour
  • 2 tsp. cinnamon
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/4 tsp. nutmeg
  • 4 c. quick oats
  • 2 c. peeled and diced green apples
  • 1/2 c. raisins
  • 1 c. sugar, granulated

Instructions

  1. Heat oven to 350°.
  2. Spray Pam on 15 1/2 x 10 1/2 x 1-inch pan. Combine Butter Buds, brown sugar and granulated sugar in a large bowl.
  3. Beat at medium speed until well blended.
  4. Beat in Egg Beaters, apple juice and vanilla.
  5. Combine flour, cinnamon, baking powder, baking soda and nutmeg.
  6. Mix into creamed mixture at low speed until blended.
  7. Stir in oats, apples and raisins with a spoon.
  8. Spread in pan.
  9. Bake at 350° for 30 to 35 minutes or until brown and toothpick comes out clean.
  10. Cool in pan.
  11. Cut into 2 1/2 x 1 1/2-inch bars.
  12. Serve warm with cream topping (yields 4 dozen). Can be frozen.
