Ingredients

  • 1 cup 3-minute oatmeal
  • 1 cup white sugar
  • 1 stick margarine
  • 1 1/2 cups cake flour
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla
  • 1 1/2 cups boiling water
  • 1 cup brown sugar
  • 2 whole eggs
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda

Instructions

  1. Pour boiling water over the oatmeal and mix well. Let stand until cool.
  2. Cream the butter and sugars together. Add vanilla and eggs one at a time, stirring well after each addition.
  3. Gradually add salt, baking soda, cinnamon, and flour to the mixture. Then add the oatmeal.
  4. Pour the batter into a large 9 x 13 x 2-inch pan.
  5. Bake at 350°F (175°C) for 30 minutes.
