Ingredients

  • 3 cups quick oats
  • 3/4 cup whole wheat flour
  • 1 1/4 cups unbleached flour
  • 1 1/2 to 1 3/4 cups warm water
  • 1 1/2 tablespoons brown sugar
  • 1/2 cup vegetable oil
  • 1 3/4 teaspoons salt

Instructions

  1. Stir together the brown sugar, salt, 1 1/2 cups of warm water, and vegetable oil.
  2. Add the quick oats and flours, mixing until a moist dough forms. Add more water if necessary.
  3. Roll the dough very thin on greased (Pammed) cookie sheets.
  4. Cut into squares and prick each with a fork.
  5. Bake in a 300°F oven until light brown, watching as edges brown first.
  6. Remove the crackers from the oven once they are golden and crisp.
