Oatmeal Spelt Brown Bread

Ingredients

  • 1/2 cup quick oats
  • 1 cup boiling water
  • 2 tablespoons butter
  • 1/4 cup warm water
  • 1 teaspoon salt
  • 1/2 cup molasses
  • 2 cups whole spelt flour
  • 2 cups light spelt flour
  • 2 1/2 teaspoons instant yeast or 2 1/2 teaspoons bread machine yeast

Instructions

  1. In a medium bowl, combine oats and boiling water. Let cool to lukewarm.
  2. Add butter, warm water, salt and molasses. Stir and pour into bread bucket.
  3. Add both flours and yeast. Start machine on dough cycle. (Or use whole grain cycle and disregard step 4.).
  4. When cycle ends, dump out dough on floured board. Knead several times and place in greased loaf pan. Let rise in warm place until doubled. Bake at 375°F for 20-30 minutes.
