O'Brien Potatoes are crispy, flavorful fried potatoes combined with sautéed onions, pimentos, and green peppers, perfect as a hearty breakfast side or brunch dish.

Ingredients

  • 2 cans small peeled potatoes
  • vegetable oil
  • salt
  • pepper
  • 2 slices onion
  • 2 Tbsp. butter
  • 1 jar pimentos
  • 1 large green pepper

Instructions

  1. Drain the canned small peeled potatoes from the can.
  2. Fry the potatoes in deep vegetable oil until tender and browned.
  3. Drain the potatoes and sprinkle with salt and pepper.
  4. Sauté the onion slices in butter until deep brown, then remove from the pan.
  5. Add pimentos and finely diced green pepper to the pan and cook briefly.
  6. Add the cooked potatoes to the pan with the vegetables.
  7. Cook and stir the mixture for a few minutes until heated through.
  8. Serve hot on a platter garnished with chopped parsley.
