- Drain the canned small peeled potatoes from the can.
- Fry the potatoes in deep vegetable oil until tender and browned.

- Add pimentos and finely diced green pepper to the pan and cook briefly.
- Add the cooked potatoes to the pan with the vegetables.
- Cook and stir the mixture for a few minutes until heated through.
- Serve hot on a platter garnished with chopped parsley.
