Ingredients

  • For the Pickled Mix
  • 1/2 red onion, sliced
  • 1 cup grape tomatoes, halved
  • 1 pinch salt
  • 1 tablespoon olive oil
  • 1 cup lemon juice
  • For the Avo Smash
  • 1 avocado

Instructions

  1. To make the pickle mix, combine all ingredients in a bowl and allow to pickle overnight or a minimum 2 hours.
  2. For the avoidance smash, combine ingredients in a food processor or blender and blitz until smooth.
  3. To assemble, spread avocado on toasted sourdough and top with pickle.
