Ingredients

  • 2 1/4 cups sifted all-purpose flour
  • 4 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1 1/2 tablespoons sugar
  • 2 eggs, beaten
  • 1/2 cup egg substitute
  • 2 1/4 cups milk

Instructions

  1. Beat egg whites until fluffy and set aside.
  2. Preheat waffle iron and spray with oil before each waffle.
  3. Sift together all dry ingredients: flour, baking powder, salt, and sugar.
  4. Combine beaten eggs, milk, and egg substitute; then add to dry ingredients and mix just until combined.
  5. Gently fold in beaten egg whites to make the batter fluffy; note that the batter is thin.
  6. Pour batter into the preheated waffle iron and cook until golden and crisp.
