Ingredients

  • 2 cups okra, cut crosswise 1/4-inch
  • 1 egg
  • 1/4 teaspoon pepper
  • 4 tablespoons bacon drippings
  • 1/2 cup milk
  • 1/2 cup hush puppy mix
  • 1/2 teaspoon flavor enhancer
  • 1 teaspoon salt

Instructions

  1. Mix all ingredients except the bacon drippings in a bowl.
  2. Pour the bacon drippings into a baking dish.
  3. Pour the mixture into a pan and pat down flat.
  4. Place the pan in a preheated oven at 325°F and bake for 30 minutes.
  5. Turn the omelet and bake for an additional 5 to 10 minutes.
  6. Cut into serving sizes and serve warm.
