Ingredients

  • 1 1/2 lb. bacon
  • 1 1/2 c. bacon fat
  • 3 c. onions, chopped
  • 7 1/2 lb. green beans
  • 1/2 c. wine vinegar
  • 1 1/2 Tbsp. pepper
  • 2 c. salted peanuts

Instructions

  1. Slice bacon into 1/2-inch pieces and sauté until crisp. Drain, reserving 1 1/2 cups of bacon fat.
  2. Sauté onions in the bacon fat until golden.
  3. Cook green beans in a kettle with the onions, vinegar, and pepper until beans are cooked to the desired degree of doneness.
  4. Add bacon bits and chopped salted peanuts to the green beans.
  5. Serve hot as a flavorful side dish.
