Ingredients

  • 2 cups sifted flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 ounces unsweetened chocolate
  • 4 ounces semi-sweet chocolate
  • 1/2 pound unsalted butter
  • 2 teaspoons vanilla
  • 1 1/4 cups sugar
  • 5 large eggs

Instructions

  1. Preheat oven to 300°F (150°C).
  2. Line or spray an 8-cup capacity bread loaf pan and set aside.
  3. Sift together flour, baking powder, and salt; set aside.
  4. Melt unsweetened and semi-sweet chocolates in a double boiler until smooth; cool slightly.
  5. In a large bowl, cream the unsalted butter.
  6. Add vanilla and 1 cup of sugar; beat thoroughly.
  7. Add egg yolks and beat well.
  8. Add melted chocolate and beat until blended.
  9. Add sifted dry ingredients and beat until combined.
  10. Beat egg whites on moderately high speed until they hold a soft shape.
  11. Fold the egg whites into the chocolate mixture gently.
  12. Turn the batter into the prepared pan.
  13. Bake in the preheated oven for approximately 45 minutes or until a toothpick inserted in the center comes out clean.
  14. Cool the cake in the pan for a few minutes, then transfer to a wire rack to cool completely.
  15. Wrap the cake in plastic wrap and let stand at room temperature overnight before serving.
