Ingredients

  • 2/3 cup pumpkin
  • 3/4 cup flour
  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon
  • 1 teaspoon pumpkin pie spice
  • 2 teaspoons nutmeg
  • 1/2 teaspoon salt
  • 3 eggs
  • 1 cup sugar
  • 1 cup chopped nuts

Instructions

  1. Beat eggs and sugar until fluffy, then add pumpkin.
  2. Mix flour and spices together, then fold into pumpkin mixture.
  3. Grease a 15 x 10-inch cookie sheet and line with wax paper.
  4. Grease and flour the wax paper.
  5. Spread batter evenly on the prepared cookie sheet.
  6. Bake at 375°F (190°C) for 15 minutes.
  7. Place the cake on a dampened dish towel.
  8. Roll up the cake and let it cool on a cake rack.
