Ingredients

  • 6 oz. cornbread mix
  • 6 oz. cornbread mix
  • 1/2 cup chopped onion
  • 1 cup whole kernel corn, drained
  • 1/4 teaspoon salt
  • 2 cups cubed cooked honey ham
  • 1/2 cup chopped green peppers
  • 1 tomato, chopped

Instructions

  1. Bake cornbread according to package directions, let it cool, then crumble into a large bowl.
  2. Add chopped onion, drained corn, salt, cubed cooked ham, chopped green peppers, chopped tomato, and chopped hard-boiled eggs to the crumbled cornbread.
  3. Mix all ingredients thoroughly.
  4. Chill the mixture for at least 2 hours to allow flavors to blend before serving.
