Ingredients

  • 30 to 36 cucumbers (3 to 4 inches long)
  • 8 cups water
  • 5 cups vinegar (5 to 6% acidity)
  • 1/2 cup plus 2 tablespoons pickling salt
  • 6 cloves garlic, peeled
  • 1 tablespoon mustard seed

Instructions

  1. Wash cucumbers; cut a 1/4-inch slice from the blossom end of each.
  2. Mix water, vinegar, and salt in a Dutch oven; heat to boiling.
  3. Place one head of dill, one peeled garlic clove, and 1/2 teaspoon mustard seed in each of six quart jars.
  4. Pack cucumbers into each jar and top with another dill head, leaving 1/2 inch headspace.
  5. Pour boiling brine over the cucumbers, leaving 1/2 inch headspace.
  6. Seal jars and process for 10 minutes in a boiling water bath.
  7. Allow to sit unopened for at least 3 weeks before opening.
