Old Fashioned Jelly Roll

A classic sponge cake rolled with sweet jam, topped with whipped cream and nuts, perfect for elegant desserts or family gatherings. Light, fruity, and delightful.

Ingredients

  • 3 eggs
  • 1/4 cup cold water
  • 3/4 cup flour
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 2 teaspoons baking powder
  • jelly or jam
  • nuts

Instructions

  1. Beat eggs until light. Add sugar and continue beating until fluffy. Add water and vanilla. Cream.
  2. Sift dry ingredients together and add gradually.
  3. Pour batter into a 15 x 11-inch jelly roll pan lined with greased wax paper.
  4. Bake in a 375°F (190°C) oven for 12 to 15 minutes.
  5. Turn out immediately onto a tea towel sprinkled with powdered sugar.
  6. Cut off edges of the cake and remove wax paper.
  7. Spread generously with jelly or jam and roll up.
  8. Wrap with towel until cool.
  9. Remove towel and spread with cream icing and garnish with nuts or cherries.
