Ingredients

  • 6 slices bread, 1/2 inch thick
  • 4 eggs, separated
  • 1 pinch salt
  • 1 cup raisins
  • 6 tablespoons sugar
  • 3 1/2 cups milk
  • 1 teaspoon vanilla
  • 1/2 stick butter, melted
  • 1 teaspoon cinnamon

Instructions

  1. Break the bread into pieces and toss with melted butter and 1/4 cup of milk.
  2. Place the bread mixture in a 1 1/2 quart baking dish.
  3. Beat the sugar and egg yolks together until well blended.
  4. Add the remaining 3 1/4 cups of milk, vanilla, cinnamon, and raisins; mix well.
  5. Pour the custard mixture over the bread in the baking dish.
  6. Place the dish in a pan of water and bake at 300°F for 40-50 minutes or until a knife inserted comes out clean.
  7. Beat the egg whites until foamy.
  8. Add a pinch of salt and gradually add 2 tablespoons of sugar, beating until stiff peaks form.
  9. Spread the meringue over the pudding.
  10. Return the dish to the oven and raise the temperature to 350°F; bake until the meringue turns brown.
