Ingredients

  • 3 eggs
  • 1 cup milk
  • 1 cup flour
  • Shortening (for frying, butter flavored recommended)
  • Powdered sugar, jam, or fresh fruit (for filling)

Instructions

  1. Whisk together eggs, milk, and flour until smooth.
  2. Melt about a heaping teaspoonful of shortening in a large frying pan over medium heat.
  3. Pour a large ladle of batter into the hot pan, tilting to spread evenly to the size of the bottom of the pan.
  4. Cook until lightly browned, then quickly turn with a spatula and brown the other side for about a minute.
  5. Remove the crepe and place on a plate.
  6. Fill the center with fruit, jam, or sprinkle with powdered sugar.
  7. Roll up and serve.
