Omega Breaded Chicken
Ingredients
- 4 skinless chicken breasts ⓘ
- 3/4 cup breadcrumbs
- 2 tablespoons flour ⓘ
- 2 tablespoons italian seasoning ⓘ
- 1 tablespoon hemp seeds (available from Costco) ⓘ
- 1 tablespoon milled flax seed (available in most grocery stores) ⓘ
- 1 tablespoon onion powder ⓘ
- 1/2 teaspoon ground black pepper ⓘ
- 1/2 teaspoon salt ⓘ
- 2 eggs ⓘ
- 1 tablespoon lemon juice ⓘ
- 1 teaspoon garlic ⓘ
Instructions
- In a frying pan cook chicken with 1/4 cup of water until almost cooked through; steams chicken and keeps moist.
- While chicken is cooking, combine the next 8 ingredients in a large bowl: bread crumbs, flour, Italian seasoning, hemp seeds, flax seeds, onion powder, black pepper, salt.
- In a smaller bowl mix: 2 eggs, lemon juice, garlic.
- Cut each chicken piece in 1/2 or 1/3. Dip in egg mixture (small bowl), then in bread mixture (large bowl and fry with olive oil for about 5 min each side. Then serve and enjoy! ------------------------------ Note: You can double the hemp seeds and milled flax seeds for more omega 3 & 6 nutritional value.
