- In a large skillet, heat olive oil and sauté the sliced onion and celery for 3 to 4 minutes.
- Add the chicken pieces to the skillet.

- Add the dry vermouth and allow it to boil for 1 minute.
- Add chicken broth, minced garlic, dried thyme, salt, and pepper to the skillet.
- Bring the mixture to a boil, then cover and reduce heat to low. Cook for 10 minutes.
- Add potatoes to the skillet.
- Stir and return to a boil.
- Cover, reduce heat, and simmer for an additional 30 to 35 minutes.
