Ingredients

  • 2 tsp. olive oil
  • 1 onion, thinly sliced
  • 2 stalks celery, cut into 1-inch slices
  • 1 (3 1/2 lb.) chicken, cut into 8 pieces
  • 1/2 c. dry vermouth
  • 3/4 c. chicken broth
  • 1 tsp. minced garlic
  • 1/2 tsp. dried thyme
  • salt to taste

Instructions

  1. In a large skillet, heat olive oil and sauté the sliced onion and celery for 3 to 4 minutes.
  2. Add the chicken pieces to the skillet.
  3. Increase the heat and toss the chicken with the vegetables for 1 minute longer.
  4. Add the dry vermouth and allow it to boil for 1 minute.
  5. Add chicken broth, minced garlic, dried thyme, salt, and pepper to the skillet.
  6. Bring the mixture to a boil, then cover and reduce heat to low. Cook for 10 minutes.
  7. Add potatoes to the skillet.
  8. Stir and return to a boil.
  9. Cover, reduce heat, and simmer for an additional 30 to 35 minutes.
