Ingredients

  • 1 cup yellow cornmeal

  • 2 tablespoons drippings (bacon or salt pork)
  • 4 tablespoons minced onions, browned in drippings

Instructions

  2. Add the beaten egg, milk, and drippings to the dry ingredients.
  3. Mix until just combined to form a batter.
  4. Stir in the browned minced onions.
  5. Pour the batter into greased muffin tins, filling each cup.
