Ingredients

  • 1/4 cup plus 2 tablespoons margarine
  • 3 medium onions
  • 2 cups grated Swiss cheese
  • 1 cup crushed saltines
  • 2 eggs
  • salt

Instructions

  1. Preheat oven to 350°F. Spray Pam in a casserole dish.
  2. In a skillet, melt 1/4 cup plus 2 tablespoons of margarine over medium heat.
  3. Add the finely chopped onions and cook until tender and translucent.
  4. In a mixing bowl, beat the 2 eggs until well blended.
  5. Add the grated Swiss cheese and crushed saltines to the eggs, mixing well.
  6. Stir in the cooked onions, salt, and pepper to taste.
  7. Pour the mixture into the prepared casserole dish.
  8. Bake in the preheated oven for approximately 30 minutes or until golden brown and bubbly.
