Onion Tart

Ingredients

  • 3 Tbsp unsalted butter
  • 2 1/2 lb Bermuda onions, thinly sliced
  • 1 cup sour cream
  • 4 Tbsp sherry
  • 3 eggs
  • salt to taste
  • pepper to taste
  • dash of nutmeg
  • dash of thyme
  • dash of cloves
  • 1 flaky piecrust, unbaked
  • 4 slices lean bacon, cut in 1-inch squares

Instructions

  1. Heat butter in a heavy saucepan and stir in thinly sliced onions. Cook, stirring constantly, over medium heat until onions are almost transparent.
  2. Remove from heat and cool thoroughly.
  3. Stir in sliced mushrooms.
  4. In a bowl, combine sour cream with 4 tablespoons of sherry and three well-beaten eggs.
  5. Stir the sour cream mixture into the cooled onion and mushroom mixture.
  6. Season with salt, pepper, nutmeg, thyme, and cloves to taste.
  7. Line a 9-inch pie plate with unbaked flaky piecrust.
  8. Fill the piecrust with the onion mixture and top with bacon squares.
  9. Bake at 350°F until filling is firm and crust is lightly browned.
  10. Serve hot.
