Orange And Date Muffins

Ingredients

  • 2 1/4 cups self-rising flour, sifted
  • 1/2 cup flour, sifted
  • 1/2 tsp baking soda
  • 1 cup plus 2 tbsp firmly packed brown sugar
  • 8 tbsp (1 stick) butter, melted
  • 1 cup buttermilk
  • 1 None egg
  • 2 tsp finely grated orange peel
  • 1 cup pitted dried dates, coarsely chopped
  • None None FOR THE ORANGE SAUCE
  • 2/3 cup firmly packed brown sugar

Instructions

  1. Preheat the oven to 400°F. Grease a 12-cup muffin pan and line with paper liners.
  2. Mix flours, baking soda and sugar in a large bowl. Stir in remaining ingredients. Do not over-mix. Spoon into prepared muffin pan.
  3. Bake for 20 mins, or until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool on wire rack.
  4. Meanwhile, for the orange sauce, combine sugar and cornstarch in a small saucepan. Gradually stir in orange juice and liqueur. Bring to a boil, stirring, for 1-2 mins, until sauce boils and thickens. Stir in butter and orange peel. Serve muffins warm, drizzled with orange sauce.
