Ingredients

  • 3 cups sugar
  • 1/4 cup water
  • 1 cup undiluted evaporated milk
  • pinch of salt
  • 2 teaspoons freshly grated orange peel
  • 1 cup chopped walnuts

Instructions

  1. Put 1 cup of sugar into a heavy frying pan and stir with a wooden spoon over medium heat until the sugar is melted and caramelized to a golden brown color.
  2. Add the water and stir until the sugar completely redissolves.
  3. Add the remaining 2 cups sugar, evaporated milk, and salt.
  4. Place over low heat and stir until the mixture begins to boil.
  5. Cook, stirring frequently, until it reaches the soft ball stage (236°).
  6. Remove from heat; cool to lukewarm, without stirring.
  7. Add the orange peel and chopped walnuts.
  8. Beat until the candy loses its gloss and will hold its shape when dropped from a spoon.
  9. Pour into a lightly buttered 8-inch square pan and cool until set.
  10. Cut into squares before the candy becomes too firm.
