Ingredients

  • 1 lb. skinless chicken cutlets
  • 2 Tbsp. flour
  • salt and pepper to taste
  • 1 Tbsp. margarine
  • 1 Tbsp. honey
  • 1/2 cup orange juice
  • 2 Tbsp. chopped onions
  • 1 tsp. cornstarch
  • 1 Tbsp. water

Instructions

  1. Rinse and dry the chicken cutlets, then coat with flour and season with salt and pepper.
  2. Heat margarine in a skillet over medium heat and brown the cutlets for 3 minutes on each side.
  3. Remove the cutlets from the skillet and set aside.
  4. In a small bowl, mix honey, orange juice, and chopped onions.
  5. Pour the mixture into a small pan and heat until hot.
  6. In a separate small bowl, blend cornstarch with water to make a slurry.
  7. Add the cornstarch mixture to the orange sauce and cook, stirring constantly, until it thickens.
  8. Pour the thickened sauce over the cooked chicken cutlets and serve.
