Ingredients

  • 1 cup long grain rice
  • 2 cups water
  • 1/2 teaspoon salt
  • 1/4 cup diced onion
  • 1/3 cup diced celery
  • 1 tablespoon diced green pepper
  • 1/4 cup margarine, butter, oil, or chicken fat
  • 1 cup cooked chicken, cubed
  • 1/3 cup chopped cashews (salted, split)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt

Instructions

  1. Bring 2 cups of water and salt to a boil.
  2. Add the rice and let the water return to a boil.
  3. Lower the heat to simmer and cook for 14 minutes.
  4. Meanwhile, sauté diced onion, celery, and green pepper in fat until tender.
  5. Combine the sautéed vegetables with cooked rice.
  6. Add the cooked chicken, chopped cashews, black pepper, nutmeg, Worcestershire sauce, and salt to the rice mixture.
  7. Place in a greased 2-quart capacity baking dish.
  8. Bake in a 350-degree oven for 20-30 minutes or until the liquid is absorbed.
