Ingredients

  • 4 chicken breasts, boned, skinned and cut into thin strips
  • 3 Tbsp. soy sauce
  • 1 lb. broccoli florets
  • 3 Tbsp. cornstarch
  • vegetable oil
  • 1/2 small onion, diced
  • 2 Tbsp. minced fresh ginger
  • 1 tsp. grated orange peel
  • 1/4 tsp. ground red pepper
  • 1 tsp. dark sesame oil
  • 2 garlic cloves, minced
  • 1/2 c. chicken broth
  • 1/4 c. orange marmalade

Instructions

  1. Combine chicken and soy sauce in a plastic bag, seal and chill for 15 minutes.
  2. Cook broccoli in boiling water for 3 minutes, then transfer to ice water to stop cooking. Drain and set aside.
  3. Drain chicken, reserving the soy sauce, then dredge in cornstarch.
  4. Brown the chicken in vegetable oil over medium heat until cooked through, then remove and keep warm.
  5. Reserve drippings in the skillet, then add soy sauce, diced onion, minced ginger, grated orange peel, ground red pepper, sesame oil, and minced garlic. Saute until vegetables are tender.
  6. Add chicken broth and orange marmalade to the skillet, stirring until marmalade melts.
  7. Return the chicken to the skillet, bring to a boil, then stir in broccoli.
  8. Add orange segments if desired and serve immediately.
