Ingredients

  • 2 cups Bisquick baking mix
  • 2 tablespoons sugar
  • 1 teaspoon grated orange peel
  • 1 egg
  • 2/3 cup orange juice
  • 2 tablespoons sugar

Instructions

  1. Heat oven to 400°F.
  2. Grease bottoms only of 12 muffin cups or line with paper baking cups.
  3. Mix together the Bisquick, 2 tablespoons sugar, egg, orange peel, and orange juice.
  4. Beat vigorously for 30 seconds.
  5. Fill muffin cups about 2/3 full.
  6. Mix remaining 2 tablespoons sugar and sprinkle about 1/2 teaspoon over tops of each muffin.
  7. Bake for 15 minutes.
