Ingredients

  • pastry for 2-crust pie
  • 1 1/4 cups sugar
  • 5 tablespoons cornstarch
  • 1/4 teaspoon cinnamon
  • 2 (16 oz) cans tart cherries
  • 1 tablespoon butter

Instructions

  1. In a small saucepan, combine 3/4 cup of the sugar, cornstarch, and cinnamon until well blended.
  2. Drain cherries; reserve 1 cup of juice.
  3. Stir the cherry juice into the sugar mixture.
  4. Cook over low heat, stirring frequently, until the mixture thickens.
  5. Add the remaining 1/2 cup of sugar.
  6. Stir in the cherries.
  7. Line a 9-inch pie pan with pastry and add the cherry filling.
  8. Dot the filling with butter.
  9. Add the top crust or lattice, and cut slits in the top.
  10. Bake at 425°F for 45 to 55 minutes or until golden.
