Ingredients

  • 2 cups milk
  • 1/3 cup long grain rice
  • 2 beaten egg yolks
  • 2 tablespoons vanilla
  • dash of salt
  • 2 egg whites
  • 3 tablespoons sugar
  • orange marmalade

Instructions

  1. In a heavy saucepan, combine milk and rice.
  2. Bring to a boil, then reduce heat, cover, and cook over low heat for about 15 minutes or until rice is tender.
  3. Remove from heat.
  4. Gradually stir in 1 cup of hot rice mixture into beaten egg yolks.
  5. Return all to the saucepan and stir in orange marmalade, vanilla, and salt.
  6. Pour the rice mixture into an 8 x 6 1/2 x 2-inch baking dish.
  7. Bake, uncovered, in a 350°F oven for 12 minutes.
  8. Remove from oven and stir the rice mixture well.
