Ingredients

  • 1 Tbsp. grated orange rind
  • dash of nutmeg
  • 1/2 cup chopped almonds
  • 1/2 cup raisins
  • 1/2 cup chopped apricots

Instructions

  1. Preheat the oven to 400°F.
  2. Beat together the egg, honey, oil, milk, and orange juice.
  3. Stir in the oats and let stand for 1 or 2 minutes.
  4. Add grated orange rind if desired.
  5. Add the baking powder, salt, and flour.
  6. Mix just until blended. Do not overbeat.
  7. Pour the batter into a lightly oiled or wax papered 4 x 8-inch loaf pan.
  8. Bake for 45 to 55 minutes or until nicely browned.
