A light and refreshing dessert with crunchy cracker crust, creamy orange-flavored filling, and tender mandarin oranges, perfect for summer gatherings or family dinners.

Ingredients

  • 60 Ritz crackers
  • 1 stick margarine
  • 1/2 cup condensed sweetened milk
  • 1 can (6 oz.) frozen orange juice
  • 1 (8 oz.) Cool Whip
  • 2 cans mandarin oranges

Instructions

  1. Mix crumbled Ritz crackers, sugar, and melted margarine.
  2. Press the mixture into the bottom of a 9 x 13-inch pan to form a crust.
  3. Reserve some of the cracker mixture to sprinkle on top later.
  4. Mix thawed orange juice with condensed sweetened milk.
  5. Add thawed Cool Whip to the orange mixture and mix well.
  6. Fold in the drained mandarin oranges.
  7. Spread the orange mixture over the crust in the pan.
  8. Sprinkle the reserved cracker crumbs on top of the dessert.
  9. Refrigerate for at least a few hours or overnight before serving.
