Ingredients

  • 4 cups cauliflower
  • 1 tablespoon milk
  • 1 can cream of mushroom soup
  • 1/4 cup lite mayonnaise
  • 1/2 cup grated Cheddar cheese
  • 1 teaspoon curry powder
  • 2 tablespoons butter
  • 1 cup cracker crumbs

Instructions

  1. Cook cauliflower until tender-crisp and set aside in a large casserole dish.
  2. Combine milk, cream of mushroom soup, mayonnaise, grated Cheddar cheese, and curry powder.
  3. Pour the mixture over the cooked cauliflower.
  4. Mix melted butter and cracker crumbs together.
  5. Sprinkle the cracker crumb mixture over the casserole.
  6. Bake at 350°F for 30 minutes until bubbly and golden.
