Ingredients

  • 2 (3 oz.) packages orange Jell-O
  • 1 (16 oz.) can crushed pineapple, drained
  • 1 (8 oz.) can mandarin oranges
  • 1 package lemon pie filling
  • 1 (6 oz.) can frozen orange juice (undiluted)
  • 1 cup whipped cream or Cool Whip
  • 1/2 cup grated cheese
  • 1 1/2 cups boiling water

Instructions

  1. Dissolve the orange Jell-O in boiling water and let it cool slightly.
  2. Add 1/2 cup of juice from the drained pineapple and mandarin oranges into the Jell-O.
  3. Chill the mixture until slightly thickened.
  4. Fold in the drained crushed pineapple and mandarin oranges.
  5. Turn the mixture into a 13 x 9 x 2-inch pan and chill until fully set.
  6. Prepare the lemon pie filling as directed on the package and let it cool.
  7. Whip the cream or Cool Whip until fluffy and fold into the cooled pie filling.
  8. Spread the whipped pie filling over the set Jell-O salad.
  9. Sprinkle grated cheese on top as a garnish.
  10. Serve the salad chilled, yielding approximately 12 to 16 servings.
