Orecchiette Boscaiola

Ingredients

  • 13.5 oz orecchiette pasta
  • 4 1/2 tbsp butter
  • 4 oz pancetta, finely chopped
  • 5 oz mushrooms, thinly sliced
  • 1 clove garlic, minced
  • 1 tsp cracked black pepper
  • 1 1/4 cups heavy cream
  • 1.5 oz Parmesan cheese, finely grated

Instructions

  1. Cook pasta in boiling salted water until al dente. Drain.
  2. Melt butter in a medium frying pan over medium-high heat. Cook pancetta, stirring, for 5 mins. Add mushrooms and garlic. Cook, stirring, for 3 mins, until fragrant. Add pepper and heavy cream. Simmer for 5 mins, or until sauce reduces by 1/2. Add cheese and stir over low heat for 2 mins, or until cheese melts. Add pasta and toss to combine.
