Ingredients

  • 1/2 pkg. Monterey Jack cheese
  • 1/2 pkg. Cheddar cheese
  • 1 bunch scallions
  • 1/2 to 3/4 cup mayonnaise
  • 1 loaf French bread, buttered
  • 2 cups milk
  • 2 1/2 Tbsp. dry yeast
  • 1/2 cup shortening
  • 1/4 cup sugar
  • 1 tsp. salt
  • 6 1/2 to 7 cups flour

Instructions

  1. Combine yeast, shortening, sugar, salt, and 3 cups of the flour in a large mixing bowl.
  2. Heat milk to 120° to 130°F.
  3. Add the heated milk to the yeast mixture and beat 200 strokes.
  4. Stir in as much of the remaining flour as possible to form a dough.
  5. Knead the dough on a floured surface for 10 minutes.
  6. Place the dough in a greased bowl, cover with a damp towel, and let it rise until doubled in size, about 45 minutes to 1 hour.
