Instructions
- Wash, dry, and prick potatoes with a fork.
- Bake or microwave potatoes until tender.
- Drain and flake the salmon; add soy sauce, lemon juice, and Oriental sesame oil.
- Toss the salmon mixture and set aside.
- Once potatoes are cooked, split them open.
- Gently squeeze to fluff the inside of the potatoes.
- Divide the salmon mixture evenly over the split potatoes.
- Sprinkle with snipped chives and red pepper mix (if using).
