A quick and flavorful baked potato topped with flaked salmon seasoned with soy, lemon, and sesame oil, garnished with chives for a light, savory meal perfect for any occasion.

Ingredients

  • 2 (8 oz.) potatoes
  • 1 (6 1/2 oz.) can boneless, skinless salmon
  • 2 Tbsp. soy sauce
  • 1 tsp. lemon juice
  • 1/4 tsp. Oriental sesame oil
  • snipped chives
  • red pepper mix (optional)

Instructions

  1. Wash, dry, and prick potatoes with a fork.
  2. Bake or microwave potatoes until tender.
  3. Drain and flake the salmon; add soy sauce, lemon juice, and Oriental sesame oil.
  4. Toss the salmon mixture and set aside.
  5. Once potatoes are cooked, split them open.
  6. Gently squeeze to fluff the inside of the potatoes.
  7. Divide the salmon mixture evenly over the split potatoes.
  8. Sprinkle with snipped chives and red pepper mix (if using).
