Ingredients

  • 1 lb lean flank steak
  • 2 Tbsp dry sherry
  • 1 tsp cornstarch
  • 1/4 cup soy sauce
  • 1 tsp finely chopped ginger
  • 1 tsp sugar
  • 3 whole stalks broccoli
  • 1/2 tsp salt
  • 3 Tbsp oil
  • 1/4 cup diced scallions
  • 1/3 cup sliced water chestnuts (optional)

Instructions

  1. Slice the steak at an angle into 1/4-inch thick pieces, about 2 inches long.
  2. Combine sherry, cornstarch, soy sauce, ginger, and sugar in a bowl.
  3. Add the beef slices to the marinade, mix well, and set aside.
  4. Cut broccoli into bite-sized flowerets and peel stalks, slicing them diagonally into small pieces.
  5. Dry the broccoli pieces with paper towels and sprinkle with salt.
  6. Heat 2 tablespoons of oil in a wok or large skillet over medium-high heat.
  7. Add broccoli and cook quickly, stirring until bright and crisp. Remove from pan and keep warm.
  8. Add remaining oil to the pan and heat.
  9. Stir in the beef mixture, water chestnuts (if using), and scallions.
  10. Cook quickly for about 2 minutes, until beef is cooked to desired doneness.
  11. Return broccoli to the pan and stir to combine. Serve hot with rice.
