Orzo Tomato Salsa
Ingredients

- 12 - 16 firm, ripe plum tomatoes ⓘ
- 1 medium red onion, small dice ⓘ
- 2 jalapeno peppers, seeds and ribs removed, small dice
- 1 cup cooked orzo, cooled ⓘ
- 1 - 2 cloves garlic, chopped ⓘ
- juice of 1 lime ⓘ
- 1 1/2 tbsp. olive oil ⓘ
- 1 tsp. dried or 2 tbsp. fresh cilantro ⓘ
- 3/4 tsp. kosher salt ⓘ
- 1/4 tsp. freshly ground pepper ⓘ
- 1/8 tsp. chili powder ⓘ
- 1 tbsp. red wine vinegar ⓘ
Instructions
- Prepare tomatoes by removing tops by removing ribs and seeds and cutting into small dice. Combine remainder of ingredients. Refrigerate at least 1 hour before serving.
