Ingredients

  • 4 or 5 Russet potatoes
  • 1 small onion
  • 3 Tbsp. margarine
  • seasoned salt
  • black pepper

Instructions

  1. Place thinly sliced potatoes in a casserole coated with nonstick cooking spray.
  2. Skin the onion and slice into rings.
  3. Place onion ringlets on top of the potatoes.
  4. Slice margarine into about 8 pats and arrange over the potatoes and onion.
  5. Sprinkle generously with pepper and seasoned salt.

Tips & Substitutions

For best results, choose Russet potatoes for their starchy texture, which makes them fluffy when baked. If you prefer a healthier option, substitute margarine with olive oil or vegan butter. Experiment with different seasonings such as garlic powder or paprika for added flavor. For a twist, layer in some cheese or cooked bacon between the potatoes and onions.

Serving Suggestions

These potatoes make a comforting side dish that pairs beautifully with roasted meats or grilled vegetables. Consider serving them alongside a fresh salad or a hearty main like Beef Junk. For a complete meal, add a protein source such as grilled chicken or beans. They are also great for potlucks or family gatherings.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place the potatoes in a baking dish, cover with foil, and warm in a 350°F oven until heated through, about 15-20 minutes. Alternatively, you can microwave individual servings for a quicker option.
