Ingredients

  • 2 egg whites (room temperature)
  • pinch of salt
  • 2/3 cup sugar
  • 1/4 teaspoon almond extract
  • 1/4 teaspoon orange extract
  • 1/2 teaspoon vanilla
  • 1 cup coarsely chopped nuts

Instructions

  1. Beat egg whites until foamy.
  2. Gradually add sugar and beat until stiff peaks form.
  3. By hand, fold in flavorings, then chopped nuts.
  4. Place plain white or brown paper on a baking sheet and drop spoonfuls of meringue mixture onto it.
  5. Place the pan in a preheated 350°F oven and immediately turn off the oven.
  6. Leave the meringues in the oven overnight without opening the door.
