Pampered Chicken
Ingredients
- 4 boneless, skinless chicken breasts (about 1 1/4 lb.) ⓘ
- salt and white pepper ⓘ
- 1 Tbsp. butter ⓘ
- 3 Tbsp. finely chopped shallots ⓘ
- 1 tsp. finely chopped garlic ⓘ
- 4 plum tomatoes, cut into small cubes ⓘ
- 2 Tbsp. red wine vinegar ⓘ
- 1 Tbsp. tomato paste ⓘ
- 4 Tbsp. chopped fresh parsley leaves ⓘ
- 1 Tbsp. olive oil ⓘ
- 1 tsp. dried tarragon ⓘ
- 1/2 c. dry wine ⓘ
- 4 Tbsp. drained capers ⓘ
Instructions
- Sprinkle the chicken with salt and pepper.
- Heat the oil and butter in a heavy skillet.
- Add the chicken breasts and saute over medium-high heat until lightly browned, about 5 minutes.
- Add the shallots and garlic around the chicken and cook briefly.
- Add the tarragon, tomatoes, vinegar, capers, wine and tomato paste. Stir and blend well; bring to a boil, cover and simmer for 5 minutes.
- Sprinkle with parsley and serve.
