Ingredients

  • 16-inch French loaf
  • 1/4 cup lemon juice
  • 1 tablespoon olive oil
  • 2 scallions
  • 2 tablespoons chopped black olives
  • 1 1/2 tablespoons drained capers
  • 1/4 teaspoon dry thyme
  • 1 clove garlic
  • 1 large tomato

Instructions

  1. Cut the French bread lengthwise and scoop out the center, leaving a 1/2-inch shell.
  2. Using a food processor, process the bread crumbs until finely chopped; set aside.
  3. Whisk together lemon juice, olive oil, and minced garlic.
  4. Stir in the bread crumbs, chopped tomato, sliced scallions, chopped black olives, drained capers, and dried thyme.
  5. Mix well and season with salt and pepper to taste.
  6. Spoon the mixture into the bread shell.
