Tips & Substitutions
For added depth of flavor, consider sautéing the vegetables longer to caramelize them slightly. If you want to enhance the dish, add some Italian seasoning or a pinch of red pepper flakes for heat. You can substitute chickpeas with white beans or lentils if desired. Fresh zucchini can be swapped with other vegetables like bell peppers or green beans, which are common in Mediterranean recipes.
Serving Suggestions
Serve Zucchini Minestrone Soup hot, garnished with extra fresh parsley and basil for a burst of color and flavor. It pairs beautifully with a slice of crusty bread or a side salad. For a heartier meal, consider serving it alongside the Quick Chickpea And Ditalini Meal or a light Mediterranean salad for a balanced lunch or dinner.
Storage & Reheating
Store leftover soup in an airtight container in the refrigerator for up to 3 days. To reheat, gently warm it on the stove over medium heat, adding a splash of water if needed to loosen the consistency. If freezing, allow the soup to cool completely before transferring to a freezer-safe container, where it can last for up to 3 months.
