Ingredients

  • 6 small redskin potatoes
  • 3 Tbsp. margarine or butter
  • 1 Tbsp. fresh parsley
  • 1/4 tsp. paprika
  • dash of cayenne pepper

Instructions

  1. Arrange the quartered redskin potatoes in a 2-quart microwave-safe dish, skin side down, and cover.
  2. Cook on High for 8 to 10 minutes, or until almost done. Rotate after 4 minutes of cooking.
  3. In a 1-cup glass measure, melt the margarine or butter on High for 30 to 45 seconds.
  4. Add the chopped parsley, paprika, and a dash of cayenne pepper to the melted margarine or butter and mix well.
  5. Pour the mixture over the potatoes, stir to coat, and cover.
  6. Cook on High for an additional 1 1/2 to 3 minutes, or until the potatoes are cooked through.
  7. Let stand for 5 minutes before serving.
