- Arrange the quartered redskin potatoes in a 2-quart microwave-safe dish, skin side down, and cover.
- Cook on High for 8 to 10 minutes, or until almost done. Rotate after 4 minutes of cooking.
- In a 1-cup glass measure, melt the margarine or butter on High for 30 to 45 seconds.
- Add the chopped parsley, paprika, and a dash of cayenne pepper to the melted margarine or butter and mix well.
- Pour the mixture over the potatoes, stir to coat, and cover.
- Cook on High for an additional 1 1/2 to 3 minutes, or until the potatoes are cooked through.
- Let stand for 5 minutes before serving.
