Ingredients

  • 1 large venison roast
  • 6 or 7 large potatoes, cubed
  • 3 large carrots, sliced
  • 2 stalks celery, chopped
  • 1 medium onion, sliced
  • salt to taste
  • pepper to taste

Instructions

  1. Preheat the oven to 225° to 250°F.
  2. Place the venison roast in the center of a large cast-iron pot.
  3. Arrange the cubed potatoes, sliced carrots, and chopped celery around the roast.
  4. Top the roast with sliced onion.
  5. Season with salt, pepper, seasoned salt, and hot sauce to taste.
  6. Cover with a glass lid and bake slowly for 3 1/2 to 4 hours, or until very tender.
