Ingredients

  • 6 boneless, skinless chicken breasts
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons dry bread crumbs
  • 3 tablespoons olive or vegetable oil
  • 1/2 cup dry wine

Instructions

  1. Rinse chicken breasts with water; do not dry.
  2. Coat chicken with combined Parmesan cheese and bread crumbs.
  3. Heat oil in skillet over medium-high heat.
  4. Brown chicken for 5 minutes on each side or until lightly browned and tender.
  5. Remove chicken to platter.
  6. Keep warm.
  7. Reduce heat to medium.
  8. Add wine to skillet; stir to loosen drippings.
  9. Remove from heat and serve over chicken.
