Chicken Meatballs

Ingredients
- 2 slices fat-free bread ⓘ
- 1 small onion ⓘ
- 2 medium carrots ⓘ
- 1 lb ground chicken ⓘ
- 1/2 tsp salt ⓘ
- 2 Tbsp chopped parsley ⓘ
- 1/2 lb medium mushrooms ⓘ
- 2 (14 1/2 oz) cans Italian-style stewed tomatoes ⓘ
- 1 cup frozen Italian-style green beans
- 1 cup frozen small white onions
- Chopped pitted ripe olives for garnish ⓘ
- Italian bread (optional) ⓘ
Instructions
- Preheat oven to 400°F. Grease a 13 x 9-inch baking pan.
- Chop the bread into fine crumbs to make about 1 cup.
- Grate enough onion to yield 1 tablespoon.
- Finely shred carrots to make 1/2 cup.
- In a large bowl, mix bread crumbs, onion, shredded carrots, ground chicken, salt, and 1 tablespoon chopped parsley.
- Shape the mixture into 20 meatballs using wet hands for easier shaping.
- Place meatballs in the prepared baking pan.
- Bake for 25 minutes or until lightly browned and cooked through.
- Meanwhile, heat stewed tomatoes, green beans, and small white onions in a large pot.
- Add cooked meatballs to the tomato mixture and simmer if desired.
- Garnish with chopped pitted ripe olives before serving.
