Ingredients

  • 2 slices fat-free bread
  • 1 small onion
  • 2 medium carrots
  • 1 lb ground chicken
  • 1/2 tsp salt
  • 2 Tbsp chopped parsley
  • 1/2 lb medium mushrooms
  • 2 (14 1/2 oz) cans Italian-style stewed tomatoes
  • 1 cup frozen Italian-style green beans
  • 1 cup frozen small white onions
  • Chopped pitted ripe olives for garnish
  • Italian bread (optional)

Instructions

  1. Preheat oven to 400°F. Grease a 13 x 9-inch baking pan.
  2. Chop the bread into fine crumbs to make about 1 cup.
  3. Grate enough onion to yield 1 tablespoon.
  4. Finely shred carrots to make 1/2 cup.
  5. In a large bowl, mix bread crumbs, onion, shredded carrots, ground chicken, salt, and 1 tablespoon chopped parsley.
  6. Shape the mixture into 20 meatballs using wet hands for easier shaping.
  7. Place meatballs in the prepared baking pan.
  8. Bake for 25 minutes or until lightly browned and cooked through.
  9. Meanwhile, heat stewed tomatoes, green beans, and small white onions in a large pot.
  10. Add cooked meatballs to the tomato mixture and simmer if desired.
  11. Garnish with chopped pitted ripe olives before serving.
